DJ's Yummy Delicious Raw Green Smoothie
"Green Smoothie" is a wonderful Raw Food!!! 1-2 cups water, 1 Tbsp. Red Maca powder, 2 Tbsp. Hemp Seed, 1 Tbsp. Cocao Nibs, 6-8 Cashews or almonds, 1 cup Chia gel, 2 Bananas, apple or pear, 4-5 handfuls Assorted Greens; Kale, Mizuna, Spinach, Arugula, Parsley, Chard, Celery, Mustard Greens etc. If you want to sweeten use a little raw honey. Blend in VitaMix type blender for 10-15 seconds. Makes 32 oz. of Yummy Delicious Raw Green Smoothie!!!
Purely Raw Chocolate Fudge Delite
1 1/2 cup Walnuts, 1 1/2 cup fresh pitted dates or raisins, 1/2 cup raw cacao powder, 1 tsp vanilla, 1 tsp raw honey, pinch Celtic Sea SaltCombine all ingredients (except 1/3 cup walnuts) in a food processor, blend until smooth. Put in freezer until firm. Remove and shape into small balls. Chop remaining walnuts very fine an roll chocolate ball in walnuts. Keep in the freezer until ready to serve. Note: Place the pitted dates or raisins in the freezer about 10 minutes prior to using.
DJ’s Veggie Delight Recipe
The following receipes except DJ's Beanzie Soup and Corn Bread recipe can be cooked on low heat or eaten raw. If eaten raw combine all ingredients toss and mix together. 50% or more of your daily diet should consist of fresh raw food.
Fresh raw veggies and herbs to tickle your taste buds! Raw food or cooked let your taste buds make the choice.
1 med. sweet yellow onion chopped -
4 cloves garlic chopped or sliced -
1 large green pepper chopped -
1 large red pepper chopped -
8 oz mushrooms sliced -
16 oz diced tomatoes -
3 tbsp water -
3 tbsp Extra Virgin Olive Oil
Sauté onions, garlic, red and green peppers for a few minutes in olive oil on low heat. Add water, Celtic or Himalayan sea salt and ground black pepper to taste, Sprinkle with a dash of cinnamon, 1 tsp cumin, 1/8 tsp nutmeg, 1/2 tsp thyme, 1/8 tsp fennel, 1 tbsp sweet basil.
Simmer for a couple of minutes then add mushrooms sauté 3-5 min. The veggies should be crunchy, don’t over cook use LOW heat. Add 16oz diced tomatoes with or without the skins, cover and simmer on LOW heat until rice or pasta is ready.
If you have fresh herbs awesome! If you use fresh herbs add a little more. Serve veggies on bed of basmatic rice or Deboles artichoke flour pasta of your choice.
DJ's Spring Salad Medley Recipe
Fresh, crisp, snappy raw food salad!
6 cups fresh salad greens, spinach, kale & arugula -
1 cucumber quartered & sliced -
1 sliced avacado -
1 sliced carrot -
Sliced radish, watermelon or lime radishes are delicious when in season -
Sprinkle with raw sesame, chia, sunflower and pumpkin seeds, sliced almonds add a few dried or fresh blueberries, top with a little goat cheese.
Summer is a wonderful time to enjoy fresh fruit and veggie salads. You have so many nutritious and delicious raw food choices; fresh tomatoes, celery, white turnips, melons, peaches and the list goes on! DJ’s Vinaigrette Salad Dressing Recipe
1 cup Bragg’s Raw Unfiltered Apple Cider Vinegar -
1/4 cup extra virgin olive oil -
Raw honey to taste, add a little you can always add more -
1 fresh clove garlic minced (optional)
Shake well and serve at room temperature. Best if made the day before, does not need to be refrigerated. Pour dressing over the top of your raw food salad just before serving. This taste so yummy over fresh veggies.
DJ’s Breakfast Fruit Medley Recipe
Fresh raw fruit bursting with flavor!
1 red apple cut into bite size pieces,
1 pear cut into bite size pieces, 1 banana sliced, 1/4 cup fresh blueberries
Mix fruit and sprinkle with heaping tablespoon unsweetened shredded coconut, 1/2 cup granola, 1 tbsp chia seeds. This is a yummy delicious raw food and a great way to start the day.
Serve immediately (two servings)
DJ’s Veggie Supreme Recipe
Mouth-watering veggies and herbs! Mmmm nutritious and delicious! This is awesome served as a raw food dish... Toss, mix & serve.
1 med sweet yellow onion chopped - 2 lg green bell peppers chopped - 2 med zucchini quartered and sliced - 8 oz portabella mushrooms sliced - 1 tbsp. fresh ginger chopped fine - 1 tsp. fresh tarragon chopped fine - 2 tbsp. Extra Virgin Olive Oil -
3 tbsp. water.
Sauté onions and green peppers 3 to 5 minutes add 1/2 tsp Celtic sea salt, 1/8 tsp anise, 1/2 tsp fennel, 1 tsp cumin, 3 tbsp water, fresh ginger and tarragon. Sauté for about a min. add all other ingredients.
Simmer veggies until warm. Cook on LOW heat. Don't over cook veggies! Serve on a bed of quinoa; sprinkle with sesame and chia seeds. Can also be served over basmatic rice. If available use fresh herbs and double the amount in the recipe. Let your taste buds decide if you need to add a "little" more.
Yummy nutritious and delicious meals in minutes. Don't forget to start the rice, quinoa or pasta it can simmer while you prepare the veggies and herbs.
DJ's Beanzie Soup Recipe
Warm tasty soup bursting with flavor!
1 cup great northern beans - 1/2 cup kidney beans - 1/4 cup mung beans 1/4 cup adzuki beans - 1 med yellow onion chopped - 3/4 cup celery chopped - 2 tsp Celtic Sea Salt - 1/4 tsp black pepper - 1 1/2 tsp cumin - 1/4 tsp anise - 1/2 tsp fennel - 1 1/2 tsp thyme - 1 tsp rosemary and 1 bay leaf.
Cover beans with water and soak overnight. Rinse with cold water. Put beans in large stainless steel pot, add six cups of cold water. Bring beans and water to a boil, immediately turn heat down. Add herbs, celery and onions. Simmer on low heat until beans are soft.
Note: If you use fresh herbs increase the amount called for and chop very fine. The organic dried beans can be purchased at your local health food store. Whole Foods Market has a "bulk bin" section in their store. It's great because you can purchase any quantity.
DJ's Scrumptious Corn Bread Recipe
Yummy yellow corn bread, add raw honey and it's dessert!
1 cup yellow corn(grits or polenta) - 1 cup spelt - 2 tsp baking powder(aluminum-free) - 1 tsp Celtic or Himalayan Sea Salt - 2 large free-range eggs - 2 tbsp Raw Honey - 2 tbsp extra virgin olive oil - 3/4 cup water
Preheat oven to 375 degrees F. Butter an 8-inch glass cookware.
Mix all dry ingredients in large mixing bowl. Whisk water, eggs, oil, honey in a small bowl. Add liquid ingredients to dry ingredients. Stir lightly just to blend; do not overmix. Pour into prepared cookware. Bake approximately 20 min. Insert toothpick, when pulled out it should be dry. Makes 9 pieces.
Tips
Always use low heat when cooking; veggies lose valuable nutrients when exposed to high temperatures. It is important to keep fresh raw foods in your daily diet. 50% is a good start and the more raw food you eat the better it is to achieve optimum health.
If you choose to wash your veggies and fruit use organic soap and rinse well. Buy fresh veggies, herbs and fruit from your local farmers’ market if available. The fresher the better!
Plan a weekly menu, write a grocery list and go shopping for your fresh veggies and herbs. If possible buy from your local farmer's market.

The veggies, fruits and herbs in our recipes are grown organically. We eat veggies and fruits that are in season. We live in the midwest so during the winter fresh local produce is harder to find. Often times we will substitute zucchini for cucumbers, yellow squash in place of zucchini and so on. Winter is a good time to sprout seeds. Check with your organic farmer for quality seed.
